  • 8 slices slices of bread Use whole grain for a healthier option
  • 4 large eggs
  • 2 cups milk Low-fat or unsweetened almond milk for a lighter version
  • 1/2 cup sugar Can reduce to 1/4 cup or use a natural sweetener
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2-3 apples, peeled and sliced
  • 1/2 cup cooked breakfast sausage (optional) Add for higher protein
  • Butter for greasing the pan

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9" by 13" baking pan with butter.
  2. Arrange half of the bread slices in the bottom of the pan. If using, sprinkle the cooked sausage over the bread.
  3. Layer the sliced apples over the bread.
  4. In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon. Pour the egg mixture evenly over the bread and apples.
  5. Place the remaining bread slices on top, then pour any remaining egg mixture over it.
  6. Cover the pan with foil and refrigerate for at least 30 minutes or overnight.
Cooking
  1. When ready to bake, remove the foil and bake for 45 to 55 minutes or until golden brown and set in the center.
  2. Let it cool slightly before serving.

Notes

Serve warm in portions of 1-2 slices per person. Pair with fresh fruit or Greek yogurt to enhance fiber and protein.
