  • 1 lb bacon Use regular, hardwood-smoked bacon for best flavor.
  • 2 medium onions, diced Cook until soft and slightly brown.
  • 4 cloves garlic, minced Adjust amount to your taste.
  • 1/4 cup brown sugar Provides sweetness to the jam.
  • 1/4 cup apple cider vinegar For tanginess.
  • 1 tbsp maple syrup Optional, for added sweetness.
  • to taste black pepper Optional, for added spice.
  • to taste chili flakes Optional, for heat.

Method
 

Preparation
  1. Slice the bacon into bite-sized pieces and cook it in a skillet over medium heat until crispy.
  2. Once crispy, remove most of the grease, leaving a little for flavor.
  3. Add diced onions to the skillet and cook until soft and slightly brown.
  4. Stir in minced garlic and cook briefly.
  5. Mix in brown sugar, apple cider vinegar, and maple syrup (if using).
  6. Add black pepper and chili flakes to taste.
  7. Reduce heat and let the mixture bubble until it thickens.
  8. Remove from heat and allow the jam to cool before transferring to a jar.

Notes

Stir often to prevent burning, especially after adding sugar. Allow the jam to cool before tasting as it thickens. Store in the fridge for up to two weeks, or freeze in sterile jars for longer storage.
