Ingredients
  

Pastry and Filling
  • 1 sheet puff pastry, thawed Thaw in the fridge overnight or for 20-30 minutes at room temperature.
  • 4 oz brie cheese, cut into 12 cubes You can leave the rind on or cut it off based on preference.
  • ½ cup cranberry sauce Use store-bought or homemade.
  • 2 tbsp candied pecans, chopped Optional for added crunch.
  • 1 sprig fresh rosemary For garnish.

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Roll out the puff pastry and cut into 12 equal squares. Press each square into the muffin cups.
  3. Place a cube of brie into each pastry cup.
  4. Top each with a spoonful of cranberry sauce and a sprinkle of chopped candied pecans, if using.
Baking
  1. Bake for 15–18 minutes or until golden brown and bubbly.
  2. Cool for 5 minutes, then garnish with a tiny sprig of rosemary.
Serving
  1. Serve warm on a plate or board for best flavor.

Notes

These bites can be frozen either baked or unbaked for later use. To reheat, bake from frozen at 350°F for 10-15 minutes.
