Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk together the flour, eggs, milk, and salt until smooth.
- Heat a non-stick skillet over medium heat and add a small amount of butter. Pour in about 1/4 cup of the batter and swirl to coat the bottom. Cook until golden, about 1-2 minutes per side. Repeat with remaining batter.
- In another pan, sauté the mushrooms in a little butter until softened.
- In a mixing bowl, combine the cooked ham, sautéed mushrooms, cheese, parsley, salt, and pepper.
- Fill each crepe with the ham and mushroom mixture, roll them up, and place in a baking dish.
Baking
- Pour any remaining cheese on top and bake for 25 to 30 minutes until heated through and golden.
- Serve warm and enjoy!
Notes
Store baked crepes in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven. Can be frozen for up to 2 months.
