  • 2 cups milk Use 1% or unsweetened almond milk for lighter option.
  • 1 pound sausage Lean turkey sausage is a lighter alternative.
  • 2 cups shredded cheese Cheddar or your choice.
  • 1 cup chopped vegetables (e.g., bell peppers, onions, spinach) Add more for a nutritious boost.
  • to taste Salt and pepper Adjust according to preference.
  • 1 teaspoon dried mustard Optional for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Brown the sausage in a skillet over medium heat until fully cooked. Drain any excess fat.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, and dried mustard (if using).
  4. Grease a 9×13 inch baking dish.
  5. Layer the sliced bread in the dish, followed by the cooked sausage, vegetables, and cheese.
  6. Pour the egg mixture evenly over the layers.
  7. Cover and refrigerate for at least 8 hours or overnight.
Baking
  1. Bake uncovered for 1 hour and 15 minutes, or until the casserole is set and golden brown.
  2. Let it cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Can freeze for up to 2 months. For freezing, cool the casserole fully, then cut into serving-size pieces and wrap them well.
