Crust and Filling
  • 1 piece refrigerated pie crust
  • 6 large eggs
  • 1 cup milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced vegetables (e.g., bell peppers, onions, spinach)
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1 cup shredded cheese (e.g., cheddar, mozzarella)

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and fit it into a large baking dish.
  3. In a bowl, whisk together the eggs, milk, heavy cream, salt, and pepper.
  4. Layer the vegetables, sausage (or bacon), and cheese evenly over the crust.
  5. Pour the egg mixture over the fillings.
Baking
  1. Bake in the preheated oven for 40 to 45 minutes, or until the center is set and the top is golden.
  2. Let it cool for a few minutes before cutting into squares.
  3. Serve warm or at room temperature.

Notes

Store cooled pieces in an airtight container in the fridge for up to 4 days. Wrap slices individually for freezing up to 3 months. Make it healthier by using reduced-fat milk and lean meats.
