  • 1 whole butternut squash, peeled and sliced
  • 1 lb Italian sausage, casings removed Can substitute with turkey sausage for a lighter version.
  • 2 cups turnip greens, chopped Can swap out with other leafy greens if desired.
  • 1 whole onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cream or half-and-half Use half-and-half for a lighter option.
  • 1 cup grated Parmesan cheese Can reduce quantity for a lower calorie option.
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Breadcrumbs for topping (optional) Skip for a low-carb version.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  3. Add Italian sausage and cook until browned.
  4. Stir in turnip greens and cook until wilted.
  5. In a large bowl, combine butternut squash, sausage mixture, cream, Parmesan cheese, salt, and pepper.
  6. Transfer mixture into a greased 9" x 13" casserole dish.
  7. (Optional) Sprinkle breadcrumbs on top for added crunch.
  8. Bake in the preheated oven for 1 hour 10 minutes to 1 hour 15 minutes, or until the squash is tender and the top is golden.
  9. Let cool for a few minutes before serving.

Notes

For a healthier version, use turkey sausage and low-fat milk. This dish is also suitable for meal prep and freezes well.
