Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
For the cheesecake filling
  • 1 cup sugar
  • 4 packages cream cheese, softened (8 oz each)
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups chopped apples
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture firmly into the bottom of the prepared baking dish.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Fold in the chopped apples, cinnamon, and nutmeg.
Baking
  1. Pour the cheesecake batter over the crust and drizzle caramel sauce on top. Swirl it gently with a knife.
  2. Bake for 45-50 minutes or until the center is set and the top is lightly golden.
  3. Allow to cool completely, then refrigerate for at least 4 hours before cutting into bars and serving.

Notes

For variations, try using pears or berries instead of apples. Serve with whipped cream or ice cream for extra delight. Store bars covered in the refrigerator for 5 to 7 days, or freeze for up to 2 months.
