  • 1 pound fresh green beans (ends trimmed and washed)
  • 1 tablespoon olive oil (or coconut oil)
  • 1 teaspoon onion powder (optional)
  • 1 tablespoon minced garlic (or 1 teaspoon garlic powder)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup shredded parmesan cheese (freshly grated preferred)
  • 1 1/2 cups shredded mozzarella cheese

Method
 

Preparation
  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Wash and trim the fresh green beans, then pat them dry.
  3. In a large mixing bowl, toss the green beans with olive oil, onion powder, garlic, salt, black pepper, and shredded parmesan cheese.
  4. Spread the seasoned green beans in a single layer on the baking sheet.
  5. Bake for 20 minutes, tossing halfway through for even roasting.
  6. Remove from the oven and sprinkle with shredded mozzarella cheese.
  7. Turn the oven to broil and return the green beans for 4-5 minutes until the cheese is golden and bubbly.
  8. Let cool for a couple of minutes, then serve hot.

Notes

Watch the broiler closely during the last step as it can brown cheese quickly. For serving, sprinkles of extra parmesan can enhance flavor.
