  • 3 large large boneless, skinless chicken breasts about 1 ¾ to 2 lbs
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 ½ Tbsp olive oil for searing
Stuffing
  • 4 oz cream cheese cold
  • 1 Tbsp mayonnaise
  • 2 cloves garlic pressed
  • ¼ tsp salt
  • 1 ½ cups baby spinach chopped
  • ¼ cup mozzarella cheese
  • ¼ cup parmesan cheese

Method
 

Preparation
  1. Mash together cream cheese, mayonnaise, garlic, and salt with a fork.
  2. Stir in chopped spinach, mozzarella, and parmesan until combined.
  3. Lay the chicken breasts flat and use a sharp knife to cut a slit about ¾ of the way through without cutting all the way.
  4. Fill each breast with ⅓ of the mixture and seal with toothpicks.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium heat.
  2. Sear the chicken for 4 minutes per side until golden brown.
  3. Transfer the skillet to a preheated oven at 425°F and bake for 10-15 minutes, until a thermometer inserted into the thickest part registers 165°F.
  4. Let the chicken rest for 5 minutes. Spoon pan juices over the top before serving.

Notes

Serve hot so the filling is soft and melty. Pair with simple sides like vegetables, salad, or pasta.
