Ingredients
  

For the dumplings
  • 1 cup all-purpose flour Can substitute with whole wheat flour for more fiber.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh herbs (parsley and thyme), chopped Use fresh herbs for better flavor.
  • 1/2 cup milk For a lighter version, use low-fat milk.
  • 2 tablespoons butter, melted Can replace with a butter substitute to reduce calories.
For the broth
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded Rotisserie chicken works well.

Method
 

Preparation
  1. In a large pot, bring the chicken broth to a simmer.
  2. In a bowl, whisk together flour, baking powder, salt, and pepper.
  3. Stir in the chopped herbs, milk, and melted butter until just combined.
Cooking
  1. Add the shredded chicken to the simmering broth.
  2. Drop spoonfuls of the dumpling dough onto the surface of the broth.
  3. Cover and cook for 20 to 25 minutes, until dumplings are fluffy and cooked through.
  4. Serve hot.

Notes

Serve with extra vegetables or a green salad for a balanced meal. Storage tip: Can be stored in airtight containers in the fridge for up to 3 days; freezing dumplings separately is recommended for better texture.
