  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 large sweet potato, peeled and cubed
  • 2 tablespoons olive oil Divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato cubes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet.
Cooking
  1. Roast the sweet potatoes in the oven for about 25 minutes or until tender.
  2. In a skillet, heat the remaining olive oil over medium heat. Add the diced chicken and season with salt and pepper.
  3. Cook the chicken for about 7-10 minutes, or until fully cooked and no longer pink.
Assembly
  1. In a bowl, combine the cooked rice, roasted sweet potatoes, and chicken. Mix well.
  2. Garnish with fresh parsley before serving.

Notes

Serve warm and consider adding a side salad or steamed veggies for a complete meal. You can also add a light dressing or a squeeze of lemon for extra flavor.
