  • 2 cups shredded chicken Use cooked or rotisserie chicken for quicker prep.
  • 1 cup ditalini pasta You can substitute with other types of pasta if desired.
  • 2 cups carrots Diced.
  • 2 cups celery Diced.
  • 1 medium onion Chopped.
  • 3 cloves garlic Minced.
  • 4 cups chicken broth Store-bought or homemade.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Adjust to taste.
  • 2 teaspoons herbs Such as thyme and parsley.

Method
 

Preparation
  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté until softened.
  2. Add the shredded chicken and chicken broth to the pot. Bring to a boil.
  3. Stir in the ditalini pasta and cook until tender, following package instructions.
  4. Season with salt, pepper, and herbs to taste.
  5. Serve warm, especially on a cold day.

Notes

Serve garnished with fresh herbs and optionally with warm bread or a side salad. Best enjoyed hot.
