Ingredients
  

For the Chicken Filling
  • 1 lb Ground chicken (93% lean) Best for juicy texture.
  • 2 cloves Garlic, minced Fresh is best for flavor.
  • 1 inch Fresh ginger, grated For bright flavor.
  • 3 tbsp Soy sauce Low sodium works fine.
  • 1 tbsp Sesame oil For flavor in filling.
  • 5-10 pieces Wonton wrappers Keep covered to prevent drying.
  • 2 scallions Green onions, chopped For topping.
For the Spicy Chili Sauce
  • 2 tbsp Chili oil or chili crisp Brings heat and texture.
  • 3 tbsp Soy sauce Add depth and saltiness.
  • 1 tbsp Rice vinegar For tang.
  • 1 tbsp Sugar or honey To balance spice.
  • 4 cloves Minced garlic More for garlic lovers.
  • 1 small Spoonful of peanut butter or tahini Optional for creaminess.
  • 1 tbsp Sesame oil Finishing touch.
  • 1-2 pinches Red pepper flakes For added heat.

Method
 

Preparation of Filling
  1. In a food processor, pulse garlic, ginger, and green onion until fine.
  2. Add the ground chicken, soy sauce, sesame oil, salt, and pepper. Pulse until combined but not pureed.
  3. Chill the filling for 10 minutes if it feels runny.
Assembly of Wontons
  1. Place a teaspoon of the filling in the center of each wonton wrapper.
  2. Dab the edges with water and fold to seal, pressing out air.
  3. Keep assembled wontons covered to prevent drying.
Cooking
  1. Boil salted water in a pot and cook the wontons until they float and chicken is cooked through, about 5-7 minutes.
  2. Remove wontons and toss in the spicy chili sauce until coated.
  3. Serve immediately topped with green onions and sesame seeds.

Notes

Adjust the heat of the sauce by altering the chili oil and adding soy or sugar for balance. For a creamier sauce, add peanut butter.
