  • 2 large eggs
  • 1 cup canned chickpeas, rinsed and drained
  • 2 tablespoons sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • 1 tablespoon Olive oil for frying

Method
 

Cooking
  1. Start by heating a tablespoon of olive oil in a non-stick skillet over medium heat.
  2. Once the oil is hot, add the rinsed chickpeas and chopped sun-dried tomatoes to the skillet. Cook them for 2-3 minutes until they are heated through.
  3. Create space in the center of the chickpeas in the skillet. Crack the eggs into this space.
  4. Sprinkle salt and pepper over the eggs as desired.
  5. Cover the skillet with a lid and let it cook for an additional 3-4 minutes. Cook until the eggs reach your desired level of doneness.
  6. Once done, serve the dish warm and enjoy your protein-packed breakfast!

Notes

Chickpea Fried Eggs can be served in various ways. Pair with toast, salad, or enjoy with avocado. Great for meal prep, but not ideal for freezing.
