Cookie Dough Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Filling
  • 1 cup chocolate ganache for filling

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a larger bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the flour mixture to the butter mixture, mixing until a dough forms.
  6. Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet, leaving space between each.
  7. Make an indentation in the center of each ball using your thumb.
Baking
  1. Bake in the preheated oven for about 10-12 minutes, or until set but still soft.
  2. Once the cookies have cooled slightly, fill the indentations with chocolate ganache.

Notes

These cookies can be customized with different fillings like fruit preserves or nut butters. Store cookies in an airtight container for up to 5 days.
