Ingredients
  

For the Cake
  • 4 large eggs (room temperature)
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp salt
For the Filling
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
For the Ganache
  • 1 cup semi-sweet chocolate

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the eggs and sugar until thick and pale.
  3. Sift together cocoa powder and salt, then gently fold into the egg mixture.
  4. Spread the batter evenly onto the prepared baking sheet.
  5. Bake for 12-15 minutes until set.
  6. Remove from the oven and let cool slightly before turning out onto a powdered sugar-dusted towel.
  7. Roll the cake gently with the towel and allow it to cool completely.
Filling
  1. For the filling, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  2. Unroll the cooled cake, spread the filling, and roll it back up.
Ganache & Serving
  1. For the ganache, melt the semi-sweet chocolate and let it cool slightly before pouring over the rolled cake.
  2. Decorate as desired and refrigerate before serving.

Notes

Serve with a scoop of vanilla ice cream or a dollop of whipped cream on the side. Can also be topped with fresh fruit or powdered sugar.
