Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the eggs and sugar until thick and pale.
- Sift together cocoa powder and salt, then gently fold into the egg mixture.
- Spread the batter evenly onto the prepared baking sheet.
- Bake for 12-15 minutes until set.
- Remove from the oven and let cool slightly before turning out onto a powdered sugar-dusted towel.
- Roll the cake gently with the towel and allow it to cool completely.
Filling
- For the filling, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Unroll the cooled cake, spread the filling, and roll it back up.
Ganache & Serving
- For the ganache, melt the semi-sweet chocolate and let it cool slightly before pouring over the rolled cake.
- Decorate as desired and refrigerate before serving.
Notes
Serve with a scoop of vanilla ice cream or a dollop of whipped cream on the side. Can also be topped with fresh fruit or powdered sugar.
