  • 8 ounces full-fat cream cheese (softened) Use full-fat for best flavor and texture
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 box (15.25 ounces) yellow cake mix Can substitute with other flavors
  • 1/2 cup holiday sprinkles Adjust colors for theme
  • 1/2 cup powdered sugar For coating

Method
 

Preparation
  1. Preheat the oven to 350 degrees F and line two baking sheets with parchment paper.
  2. In a large bowl, beat together the softened cream cheese, butter, egg, and vanilla extract with an electric mixer until smooth.
  3. Stir in the cake mix until a thick dough forms.
  4. Gently fold in holiday sprinkles, being careful not to overmix.
  5. Chill the dough for at least 30 minutes.
Baking
  1. Scoop out the dough into 1 1/2-inch balls and roll them in powdered sugar.
  2. Place the dough balls on the prepared baking sheets, about 2 inches apart.
  3. Bake for 10-12 minutes, until the edges are set but the centers still look slightly soft.
  4. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

These cookies are best served fresh and warm. Store in an airtight container for up to one week or freeze for up to three months. Enjoy with a glass of cold milk or hot chocolate.
