Ingredients
  

Dough Ingredients
  • 3 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp salt
  • 1 cup unsalted butter, at cool room temperature
  • 8 oz cream cheese, at cool room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
Cinnamon Filling
  • 6 Tbsp unsalted butter, melted
  • 2/3 cup brown sugar, divided
  • 1 Tbsp ground cinnamon
Icing
  • 1 1/2 cups powdered sugar
  • 3 Tbsp whole milk

Method
 

Preparation
  1. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In an electric mixer, cream together butter, cream cheese, and sugar until light and fluffy.
  3. Mix in egg and vanilla, then add flour mixture and combine.
  4. Divide dough, shape into squares, cover, and chill for 1.5 to 2 hours.
Baking
  1. Preheat oven to 350°F and prepare baking sheets with parchment.
  2. Roll out one portion of dough into a rectangle, brush with melted butter, and sprinkle with cinnamon sugar.
  3. Roll tightly, seal the edge, and slice into 1/2-inch pieces.
  4. Place slices on baking sheets and bake for 11-12 minutes.
Icing
  1. For icing, whisk powdered sugar, milk, and vanilla.
  2. Drizzle or spread icing on cookies and allow to set.

Notes

Cinnamon Roll Cookies can be stored in an airtight container at room temperature for about a week or frozen for up to three months.
