Preparation
- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Stir in the sugar, egg, and vanilla.
- Mix in the flour until just incorporated.
Cinnamon Swirl Assembly
- In a separate bowl, mix the cinnamon and brown sugar together.
- Pour half of the banana bread batter into the prepared loaf pan.
- Sprinkle half of the cinnamon mixture on top.
- Pour the remaining batter on top and then sprinkle the remaining cinnamon mixture.
- Use a knife to swirl the cinnamon mixture into the batter slightly.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing and serving.
Notes
Can add nuts, chocolate chips or fruit for variations. Store properly to maintain freshness.
