Preparation
- Preheat your oven to 350°F (175°C).
- In a saucepan, melt butter over medium heat. Add chopped onion and cook until translucent.
- Stir in flour and cook for 1-2 minutes, then gradually whisk in the milk.
- Cook until the sauce thickens, then add salt, pepper, and half of the cheese.
- Layer half of the sliced potatoes in a greased baking dish, pour half of the sauce over them, then repeat with the remaining potatoes and sauce.
- Top with the remaining cheese and sprinkle paprika on top.
- Cover with foil and bake for 1 hour.
- Remove foil and bake for an additional 15-20 minutes until golden and bubbly.
