  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 4 large eggs
  • 2/3 cup olive oil
  • 3 cups whipped cottage cheese 2/3 cup for batter, 3 cups for frosting
  • 2 teaspoons vanilla extract First measurement for batter
  • 2 2/3 cups finely grated carrots
For the Frosting (optional)
  • 1/4 to 1/2 cup powdered sugar Adjust to taste
  • 1 teaspoon vanilla extract Second measurement for frosting

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Spray the muffin pan tray with non-stick cooking spray.
  3. In a small bowl, combine the flour, baking soda, baking powder, cinnamon, and salt.
  4. In a large bowl, whisk together the sugar and eggs until smooth.
  5. Add the whipped cottage cheese, olive oil, and vanilla extract to the egg mixture. Whisk until smooth.
  6. Stir in the dry ingredients until just combined.
  7. Fold in the finely grated carrots.
  8. Pour the batter evenly into the greased muffin tray.
Baking
  1. Bake for 20-25 minutes or until a tester comes out clean.
  2. Allow the muffins to cool completely before frosting.
