Ingredients
  

Cinnamon Roll Dough
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder Use fresh for best results.
  • 0.25 teaspoon baking soda Use fresh for best results.
  • pinch salt Adjust to taste.
  • 1.5 cups whipped cottage cheese Ensure it's well whipped.
Cinnamon Filling
  • 0.5 cups butter, softened but not melted
  • 0.5 cups brown sugar
  • 2 tablespoons cinnamon
  • 0.125 teaspoon sea salt
Frosting
  • 3 cups whipped cottage cheese Ensure it's well whipped.
  • 0.25-0.5 cups powdered sugar Adjust according to taste.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Stir well.
  3. Add the whipped cottage cheese to the dry mixture and mix until you have a dough that comes together.
  4. In another bowl, mix together the softened butter, brown sugar, cinnamon, and sea salt until well blended.
  5. On a lightly floured surface, roll out the dough into a rectangle about 1/4 inch thick.
  6. Spread the cinnamon filling evenly over the rolled-out dough.
  7. Starting from one of the long sides, carefully roll the dough into a tight log.
  8. Slice the log into 1-inch thick pieces, yielding about 12 rolls.
  9. Place the rolls in a greased baking dish, making sure they are close but not touching.
Baking and Finishing Touches
  1. Bake the rolls in the preheated oven for about 20-25 minutes or until golden brown.
  2. While the rolls bake, make the frosting by combining whipped cottage cheese, powdered sugar, and vanilla extract in a bowl, mixing until smooth.
  3. Once the rolls are out of the oven, let them cool for a few minutes before drizzling the frosting on top.
  4. Serve warm and enjoy!

Notes

Cinnamon Rolls are best enjoyed fresh. Can be reheated in the microwave.
