Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Stir well.
- Add the whipped cottage cheese to the dry mixture and mix until you have a dough that comes together.
- In another bowl, mix together the softened butter, brown sugar, cinnamon, and sea salt until well blended.
- On a lightly floured surface, roll out the dough into a rectangle about 1/4 inch thick.
- Spread the cinnamon filling evenly over the rolled-out dough.
- Starting from one of the long sides, carefully roll the dough into a tight log.
- Slice the log into 1-inch thick pieces, yielding about 12 rolls.
- Place the rolls in a greased baking dish, making sure they are close but not touching.
Baking and Finishing Touches
- Bake the rolls in the preheated oven for about 20-25 minutes or until golden brown.
- While the rolls bake, make the frosting by combining whipped cottage cheese, powdered sugar, and vanilla extract in a bowl, mixing until smooth.
- Once the rolls are out of the oven, let them cool for a few minutes before drizzling the frosting on top.
- Serve warm and enjoy!
Notes
Cinnamon Rolls are best enjoyed fresh. Can be reheated in the microwave.
