  • 10 pcs eggs Use fresh eggs for best flavor.
  • 1 cup cottage cheese Creamy texture recommended.
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper Adjust to taste.
  • 1/2 cup gruyere cheese, shredded Can substitute with other cheeses.
  • 1/2 cup baby portobello mushrooms, sliced or chopped Other mushrooms can be used.
  • 1 teaspoon fresh thyme, minced (optional) For added flavor.

Method
 

Preparation
  1. Preheat the oven to 320ºF (160ºC).
  2. Lightly spray silicone muffin trays with cooking oil.
  3. In a blender, add the eggs, cottage cheese, sea salt, and pepper. Blend until smooth.
  4. Distribute the shredded gruyere cheese and sliced mushrooms among the muffin cups.
  5. Pour the egg mixture gently into each muffin cup until almost full.
  6. Place the baking sheet into the oven and pour hot water into the baking sheet around the muffin cups.
Baking
  1. Bake the muffins for about 25 minutes.
  2. Once done, let them cool for about 5 minutes before serving.

Notes

Serve warm or at room temperature. Great with fresh fruit or a light salad. Consider adding salsa or fresh herbs for extra flavor.
