Ingredients
  

Dry Ingredients
  • 2 cups flour All-purpose flour
  • 1 tsp baking powder For leavening
  • 1/2 tsp salt To enhance flavor
Wet Ingredients
  • 1 cup sugar White granulated sugar
  • 1 Tbsp orange zest Freshly grated
  • 1/2 cup canola oil For moisture
  • 1/2 cup half and half Can substitute with milk
  • 1/2 cup freshly squeezed orange juice For flavor
  • 2 eggs eggs Large eggs
  • 1 tsp vanilla extract For flavor
Mix-ins
  • 1-1/2 cups fresh cranberries Washed and sorted
  • 1 Tbsp cornstarch To prevent cranberries from sinking
Glaze
  • 1 cup powdered sugar For sweetness and glaze
  • 2 Tbsps freshly squeezed orange juice For glaze flavor
  • 1 tsp orange zest For garnish

Method
 

Preparation
  1. Preheat oven to 350°F. Spray a standard size bread loaf pan with non-stick spray with flour.
  2. In a small mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a larger mixing bowl, add the sugar and orange zest. Stir and smoosh the zest into the sugar for about 1 minute.
  4. Whisk in the canola oil, half and half, and orange juice into the sugar mixture, followed by the eggs and vanilla.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Avoid overmixing.
  6. In a small bowl, mix cranberries with cornstarch and then stir them into the batter.
Baking
  1. Pour the batter into your prepared bread pan and bake for 45-50 minutes or until a toothpick comes out clean.
  2. Remove from the oven and let cool in the pan for at least 15 minutes before transferring to a cooling rack.
  3. In a small mixing bowl, whisk together the powdered sugar, orange juice, and orange zest for the glaze.
  4. Once the bread is completely cool, drizzle with glaze and serve.

Notes

Pairs well with Greek yogurt and nuts for a balanced snack; wrap slices and freeze for longer storage.
