Ingredients
  

Main Ingredients
  • 2 pounds red potatoes, cut into 1-inch pieces Yukon gold or baby potatoes can also be used.
  • 2 tablespoons olive oil
  • 1/2 cup grated parmesan cheese Add more cheese in the last 5 minutes for extra crisp.
  • 3 cloves garlic, minced
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • to taste chopped parsley (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly spray a baking sheet with non-stick cooking spray.
  2. In a large bowl, mix together the olive oil, parmesan cheese, garlic, and oregano.
  3. Toss the potatoes in this mixture until fully coated.
  4. Spread them in a single layer on your baking sheet and sprinkle with salt and pepper.
Cooking
  1. Bake for 30-35 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
  2. Remove from the oven and sprinkle with fresh chopped parsley. Serve immediately and enjoy.

Notes

To keep the potatoes crispy, avoid microwaving. Store cooled potatoes in an airtight container in the fridge for up to 4 days. For freezing, cool the potatoes, spread on a tray to freeze solid, then store in a freezer bag for up to 3 months.
