Preparation
- Preheat your oven to 400°F (200°C) and lightly spray a baking sheet with non-stick cooking spray.
- In a large bowl, mix together the olive oil, parmesan cheese, garlic, and oregano. Toss the potatoes in this mixture until fully coated.
- Spread the potatoes in a single layer on your baking sheet. Sprinkle with salt and pepper.
Cooking
- Bake for 30-35 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
- Remove from the oven and sprinkle with fresh chopped parsley. Serve immediately and enjoy.
Notes
For extra crispiness, dry the cut potatoes well before tossing with the mixture. You can finish on the top rack for a few minutes to get extra brown edges. Store in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
