Preparation
- Grate the zucchini using a grater. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
- In a mixing bowl, combine the grated zucchini, Greek yogurt, flour, grated Parmesan cheese, egg, minced garlic, and chopped herbs. Season the mixture with salt and pepper to taste.
- In a skillet, heat oil over medium heat, or preheat your air fryer.
Cooking
- Drop spoonfuls of the mixture into the skillet and flatten them slightly with a spatula. If using an air fryer, place the fritter mixture in the basket.
- Fry until golden brown, about 3-4 minutes per side in the skillet. In an air fryer, cook for about 10-12 minutes until crispy and cooked through.
Serving
- Serve the fritters warm as a side dish or snack.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat to regain crispiness.
