Ingredients
  

For the Fritters
  • 2 medium medium zucchini Grated and moisture squeezed out
  • 1 cup Greek yogurt
  • 1/2 cup flour or almond flour Use almond flour for a low-carb option
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh herbs Like parsley or dill
  • to taste Salt and pepper
  • as needed oil for frying (olive oil or avocado oil)

Method
 

Preparation
  1. Grate the zucchini using a grater. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
  2. In a mixing bowl, combine the grated zucchini, Greek yogurt, flour, grated Parmesan cheese, egg, minced garlic, and chopped herbs. Season the mixture with salt and pepper to taste.
  3. In a skillet, heat oil over medium heat, or preheat your air fryer.
Cooking
  1. Drop spoonfuls of the mixture into the skillet and flatten them slightly with a spatula. If using an air fryer, place the fritter mixture in the basket.
  2. Fry until golden brown, about 3-4 minutes per side in the skillet. In an air fryer, cook for about 10-12 minutes until crispy and cooked through.
Serving
  1. Serve the fritters warm as a side dish or snack.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat to regain crispiness.
