  • 5-6 medium Medium gold potatoes (cut into large sections) Gold potatoes hold their shape well.
  • 16 oz Sauerkraut Can use fresh sauerkraut, drain any excess liquid.
  • 1.5 lb Authentic Polish sausage (sectioned into substantial pieces) Other types of sausage can be used if preferred.
  • 1/2 C Chicken broth Use gluten-free broth if needed.
  • 1 tsp Caraway seeds Adjust quantity to taste.
  • 1 leaf Bay leaf
  • Salt and pepper Adjusted to one’s preference.

Method
 

Preparation
  1. Place the sauerkraut evenly across the base of the crockpot.
  2. Position the potato sections over the sauerkraut.
  3. Place the segmented Polish sausage on top of the potatoes.
  4. In a separate vessel, combine the chicken broth, caraway seeds, and bay leaf thoroughly.
  5. Pour the broth mixture over the ingredients in the crockpot. Season with salt and pepper according to preference.
Cooking
  1. Cover the crockpot with the lid. Set it to high and let it cook for 4 hours.
  2. After 4 hours, stir the contents thoroughly before serving.

Notes

Serve warm with fresh bread for soaking up the broth, and it pairs well with a green salad or steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
