Ingredients
  

Dry Ingredients
  • 2 cups flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
Wet Ingredients
  • 1.5 cups mashed bananas (3-5 bananas depending on their size)
  • 1 cup white sugar
  • 2 large eggs
  • 0.5 cup oil

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan with nonstick cooking spray.
  2. In a small bowl, add the flour, baking powder, baking soda, salt, cinnamon, and nutmeg, and mix well. Set aside.
  3. In a larger mixing bowl, add the sugar, oil, eggs, and mashed bananas, and mix well.
  4. Add the flour mixture to the wet ingredients and mix just until combined.
  5. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  2. Remove from the oven and cool completely before cutting.

Notes

Store the cooled loaf in an airtight container for up to three days at room temperature, or refrigerate for up to a week. For freezing, wrap the loaf tightly and store in a freezer bag for up to three months. Thaw as needed.
