Ingredients
  

Main Ingredients
  • 4 cups diced or shredded cooked chicken breast
  • 8 slices cooked and chopped bacon
  • 5 cups broccoli florets (lightly blanched) OR 1 pound thawed frozen spinach (thoroughly drained) Choose either fresh broccoli or frozen spinach.
  • 3 cloves garlic (finely minced)
  • 1 cup ranch dressing
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1-3 teaspoons ranch seasoning mix (optional) Adjust based on flavor preference.
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (for garnish)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  2. If using frozen spinach, thaw it completely and squeeze out excess moisture.
  3. If using fresh broccoli, blanch in boiling water for 2-3 minutes then transfer to ice water and drain thoroughly.
Assembly
  1. Spread the cooked chicken evenly across the bottom of the prepared baking dish.
  2. Distribute spinach or broccoli over the chicken layer, sprinkling minced garlic on top.
  3. Scatter chopped bacon evenly throughout the casserole.
Creamy Mixture
  1. In a medium bowl, mix ranch dressing with half of both cheeses.
  2. Pour the creamy mixture evenly over the casserole.
Baking
  1. Bake in the preheated oven for 15 minutes.
  2. Remove from oven and top with remaining cheeses.
  3. Return to the oven for another 10-15 minutes, until cheese is melted and bubbly.
Serving
  1. Allow casserole to rest for 5-10 minutes before serving.

Notes

Serve hot with a side salad or steamed vegetables. Can garnish with paprika or fresh herbs.
