  • ½ cup Peanut butter Natural and unsweetened
  • 3 tbsp Maple syrup Nature’s candy
  • 2 tsp Espresso powder Don't skip
  • 1 tsp Vanilla extract For flavor
  • cup Oat flour Blended oats work fine
  • tsp Salt To balance the sweetness
  • ¾ cup Vegan dark chocolate Chopped
  • 1 tbsp Coconut oil For melt magic

Method
 

Preparation
  1. In a mixing bowl, combine peanut butter, maple syrup, and vanilla extract. Stir until smooth.
  2. Add espresso powder, oat flour, and salt. Mix until thick and fudgy.
  3. Scoop tablespoon-sized amounts and roll into balls.
  4. Place on a parchment-lined tray.
  5. Sprinkle with crushed espresso beans or chocolate chips.
  6. Chill in the fridge for 30 minutes.

Notes

Store in an airtight container in the fridge for up to one week. Freeze for longer storage.
