Ingredients
  

Dry Ingredients
  • 3.25 cups bread flour or all-purpose flour Use whole wheat flour for a healthier option.
  • 1 tsp instant yeast
  • 1 tsp salt Adjust based on preferences.
  • 2 Tbsp everything bagel seasoning, divided Can add more or less based on taste.
Wet Ingredients
  • 1.5 cups warm water Water between 100°F to 110°F is ideal for yeast activation.

Method
 

Preparation
  1. In a large mixing bowl, whisk together the flour, yeast, salt, and 1 Tbsp of everything bagel seasoning.
  2. Add the warm water and stir with a large fork until combined; it will look shaggy.
  3. Cover with plastic wrap and a towel, and let it sit for 12-24 hours in a non-drafty place.
Shaping
  1. Sprinkle flour on parchment paper and turn out the dough onto the paper, keeping as much in the middle as possible.
  2. Flour your hands and sprinkle a little over the dough, then fold it into itself to create a ball.
  3. Flip it over and shape it into a ball, cut an X into the top of the loaf.
  4. Cover loosely with plastic wrap and let it rest for 30 minutes.
Baking
  1. Preheat the oven to 450°F with the Dutch oven inside for 30 minutes.
  2. Remove the Dutch oven, carefully lower the dough into it using the parchment paper, and replace the lid.
  3. Bake for 30 minutes, then remove the lid and bake for an additional 5-10 minutes until golden brown.
  4. Remove the Dutch oven and transfer the bread to a cooling rack.

Notes

Store at room temperature in a paper bag or bread box for up to 3 days, or freeze slices for up to 3 months.
