Preparation
- Preheat your oven to 350°F and lightly grease a cast-iron skillet or oven-safe dish.
- Whisk the eggs in a large bowl until light and frothy.
- Stir in cottage cheese and shredded Monterey Jack cheese.
- Add green chiles, diced pimentos, melted butter, and green onions.
- In a separate bowl, mix flour, baking powder, salt, and black pepper, then gradually add to the egg mixture.
- Pour into the prepared skillet, spreading evenly.
Baking
- Bake for 40-45 minutes until the center is set and edges are golden brown.
- Let rest for 5-10 minutes before slicing and serving.
Notes
Store slices in an airtight container in the fridge for up to 4 days. To reheat, place a slice on a plate and microwave for 30-60 seconds, or warm it in a 325°F oven for 10 minutes. For longer storage, wrap individual slices in plastic wrap and place them in a freezer bag. Freeze for up to 2 months.
