Ingredients
  

Egg Mixture
  • 10 large large organic eggs
  • 16 oz small curd cottage cheese
  • 16 oz shredded Monterey Jack cheese
  • 4.5 oz canned chopped green chiles
  • 4 oz diced pimentos, drained
  • 1/4 cup chopped green onions
  • 1/4 cup melted butter
Dry Ingredients
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 350°F and lightly grease a cast-iron skillet or oven-safe dish.
  2. Whisk the eggs in a large bowl until light and frothy.
  3. Stir in cottage cheese and shredded Monterey Jack cheese.
  4. Add green chiles, diced pimentos, melted butter, and green onions.
  5. In a separate bowl, mix flour, baking powder, salt, and black pepper, then gradually add to the egg mixture.
  6. Pour into the prepared skillet, spreading evenly.
Baking
  1. Bake for 40-45 minutes until the center is set and edges are golden brown.
  2. Let rest for 5-10 minutes before slicing and serving.

Notes

Store slices in an airtight container in the fridge for up to 4 days. To reheat, place a slice on a plate and microwave for 30-60 seconds, or warm it in a 325°F oven for 10 minutes. For longer storage, wrap individual slices in plastic wrap and place them in a freezer bag. Freeze for up to 2 months.
