  • 1.5 lbs beef stew meat
  • 4 cups potatoes, diced
  • 4 cloves garlic, minced
  • 1/2 cup butter
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Method
 

Preparation
  1. Cut the beef into even pieces if needed.
  2. Wash and dice the potatoes into small cubes.
  3. Mince the garlic so it will release its flavor into the butter.
Cooking
  1. In a saucepan, melt the butter over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in beef broth, salt, pepper, thyme, and paprika.
  4. Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
  5. Cover and cook on low for 6-8 hours or until beef is tender.
Serving
  1. Use a spoon to mix the beef and potatoes before you serve.
  2. Taste the dish and add more salt or pepper if needed.
  3. Serve warm and enjoy your comforting meal.

Serve with a green salad or steamed vegetables for balance. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
