Preparation
- Preheat your oven broiler.
- In a large bowl, combine corn kernels, flour, baking powder, salt, and pepper.
- In another bowl, whisk together the milk and eggs.
- Add the milk mixture to the dry ingredients and stir until just combined. Fold in the cheese and scallions.
Cooking
- Heat oil in a large skillet over medium heat.
- Pour the batter into the skillet, spreading it out evenly.
- Cook for about 10 minutes until the edges are golden.
- Transfer the skillet to the oven and broil for about 5 minutes, or until the top is browned and cheese is melted.
- Remove from oven, slice, and serve with salad greens or topped with fried eggs.
Notes
Cool completely before storing. Refrigerate for up to 4 days or freeze for up to 2 months. For reheating, crisp the edges in a dry skillet for a few minutes.
