Main Ingredients
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 4 cups chicken broth Low-sodium option recommended.
  • 1 cup gluten-free baking mix Ensure it's certified gluten free.
  • 1 cup milk Use low-fat or unsweetened plant milk for a lighter option.
  • 1/2 cup butter Can reduce to 2 tablespoons for a healthier version.
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup mixed vegetables (carrots, peas, celery) Fresh or frozen mixed vegetables work well.

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a large pot, combine chicken broth, cooked chicken, mixed vegetables, salt, pepper, garlic powder, and onion powder.
  3. Bring to a simmer and cook for 10-15 minutes.
Dumpling Preparation
  1. In a separate bowl, mix together gluten-free baking mix and milk to form a dough.
  2. Drop spoonfuls of the dough into the simmering stew.
Baking
  1. Cover and transfer the pot to the oven. Bake for 35 to 40 minutes or until dumplings are cooked through and fluffy.
Serving
  1. Serve hot in shallow bowls.

Notes

Great for meal prep; reheat leftovers gently and add broth if needed. Can freeze portions for up to 3 months.
