Preparation
- Preheat oven to 350°F.
- In a measuring cup, place the tablespoon of lemon juice and fill with milk to make 1 cup. Set aside for a few minutes.
- In a mixing bowl, whisk together whole wheat flour, all-purpose flour, baking soda, baking powder, and salt.
- Add the milk mixture, sugar, egg, and molasses to the dry ingredients. Whisk until just combined.
Baking
- Pour the batter into a greased and floured loaf pan and bake immediately for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
Notes
For healthier options, you can reduce the sugar and use applesauce for half the molasses. To store, keep at room temperature for up to 3 days, or freeze for up to 3 months.
