Ingredients
  

Main Ingredients
  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • to taste butter or oil for grilling

Method
 

Cook the Beef
  1. Brown the ground beef in a skillet over medium heat, stirring as it cooks to break it apart. Drain excess grease after cooking.
  2. Add the taco seasoning to the beef, pour in 1/4 cup water, and let it simmer for about 5 minutes.
Warm the Tortillas
  1. Heat tortillas in a dry skillet for a few seconds on each side until flexible. Alternatively, warm them in the microwave for 15-20 seconds.
Assemble the Burrito
  1. Lay one tortilla flat on a clean surface, spreading a layer of cooked rice in the center.
  2. Add a portion of the seasoned beef on top of the rice.
  3. Drizzle some nacho cheese sauce and chipotle sauce over the beef, then add a dollop of sour cream.
  4. Finish by sprinkling shredded cheddar and mozzarella cheese on top.
Grill the Burrito
  1. Heat a clean skillet over medium heat and sprinkle 2 tablespoons of shredded cheese into the skillet.
  2. Place the burrito seam-side down on top of the melted cheese and cook until the cheese melts and forms a crispy crust, about 3-4 minutes.
  3. Carefully flip the burrito and grill the other side until golden and crunchy.

Notes

Serve with extra sour cream, salsa, or guacamole on the side. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
