Ingredients

For the Sandwich
  • 1 loaf 1 round loaf of Italian or Sicilian bread
  • 1 cup 1 cup chopped olives (green and black)
  • 1/2 cup 1/2 cup giardiniera (pickled vegetables)
  • 1 pound 1 pound sliced mortadella
  • 1 pound 1 pound sliced salami
  • 1 pound 1 pound sliced ham
  • 1/2 pound 1/2 pound sliced provolone cheese
  • 1/2 cup 1/2 cup olive oil
  • 1 tablespoon 1 tablespoon red wine vinegar
  • 1 teaspoon 1 teaspoon minced garlic
  • Salt and pepper to taste

Method

Preparation
  1. Slice the loaf of bread in half horizontally. Remove some of the soft insides to create more room for filling.
  2. In a bowl, combine chopped olives, giardiniera, olive oil, red wine vinegar, garlic, salt, and pepper to make the olive salad. Mix well.
  3. Layer the meats (mortadella, salami, ham) and provolone cheese on the bottom half of the bread.
  4. Spread the olive salad generously over the meats and cheese.
  5. Place the top half of the bread over the filling and press down to compact the sandwich.
  6. Wrap the sandwich tightly in plastic wrap and refrigerate for at least 24 hours to allow the flavors to meld.
  7. When ready to serve, remove from the refrigerator, unwrap, and slice into wedges. Enjoy!

Notes

Store in the refrigerator for several days. Wrap tightly in plastic wrap for freshness. For long-term storage, freeze individual slices.
