Cookie Dough Ingredients
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup cocoa powder Use unsweetened cocoa powder.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Fold in the chocolate chips and mini marshmallows.
  7. Drop spoonfuls of dough onto ungreased cookie sheets, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes, until the edges are set and the centers look slightly soft.
  2. Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week. To freeze, place cookies in a single layer in a container for up to three months.
