Ingredients
  

Main Ingredients
  • 1 cup butter Use unsalted for better control of flavor.
  • 3 cups sugar Can be reduced for a lighter version.
  • 1/3 cup sifted cocoa powder Use unsweetened for better flavor.
  • 12 oz can evaporated milk Can substitute with low-fat or a mixture of skim milk and heavy cream.
  • 1 tsp vanilla Pure vanilla extract recommended.

Method
 

Cooking Instructions
  1. Combine the butter, sugar, cocoa powder, and evaporated milk in a large saucepan.
  2. Bring to a boil while whisking frequently.
  3. Boil for 7 minutes.
  4. Remove from heat and stir in the vanilla.
  5. Transfer to a blender and blend for about 2 minutes, removing the center piece of the blender top and covering it with a towel to avoid splatter.
  6. Serve immediately or let sit until ready to use. Store in the refrigerator and reheat as needed.

Notes

Store in a sealed jar or airtight container. Keeps well in the fridge for up to 2 weeks. Cool completely before freezing in freezer-safe containers for up to 3 months.
