Preparation
- Preheat the oven to 350°F.
- In your mixer bowl, beat 1 cup of softened butter, 2/3 cup granulated sugar, and 1 tsp vanilla extract together for 3 minutes.
- Add in 2 cups of all-purpose flour and mix together until just combined.
- Use a 1 Tbsp size cookie scoop to scoop the dough. Roll each scoop into a ball and place on your cookie sheet about 2 inches apart.
- Use your thumb or a small spoon to press down and make an indentation in the center of each ball.
- Fill each indentation with jam.
Baking
- Bake at 350°F for 14-16 minutes until the edges are lightly browned.
- Remove from the oven and let the cookies cool on the cookie sheets for 3 minutes, then transfer to a cooling rack.
Glazing
- For the glaze, whisk together 1/2 cup powdered sugar and 2-3 tsp milk in a small mixing bowl until smooth.
- Only add enough milk until it whisks together but is the right consistency for drizzling.
- Drizzle over the cookies before serving.
Notes
Store cookies in an airtight container at room temperature for up to 4 days. Freeze baked cookies in a single layer for up to 3 months. For a healthier option, use whole grain flour and sugar-free jam.
