Ingredients
  

For the Tater Tot Cups
  • 48 pieces frozen tater tots About 1 pound
  • 2 tablespoons olive oil For greasing muffin tin
For the Bravas Sauce
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika (sweet)
  • 1/2 teaspoon smoked paprika (hot)
  • 1/4 teaspoon cayenne pepper Optional, adjust to taste
  • 1 cup tomato puree 240ml
  • 1/4 cup roasted red peppers, finely chopped
  • 1 teaspoon sugar
  • 1 teaspoon sherry vinegar
  • Salt and freshly ground black pepper, to taste
For the Toppings
  • 1 cup manchego cheese, shredded Or cheddar as a substitute
  • 4 slices bacon, cooked and crumbled Optional for vegetarians
  • 1/2 cup sour cream or garlic aioli
  • 2 tablespoons fresh parsley or chives, chopped
  • 1 teaspoon smoked paprika For garnish

Method
 

Prepare the Tater Tot Cups
  1. Preheat the oven to 400°F (200°C).
  2. Spray or brush the muffin tin with cooking spray or olive oil.
  3. Press frozen tater tots into each muffin cup to form a cup shape.
  4. Place muffin tin on a baking sheet and bake for 20 to 25 minutes until golden and crisp.
  5. Let cool for a few minutes before removing from muffin tin.
Make the Bravas Sauce
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  2. Add chopped onion and cook until soft and translucent.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in smoked paprika and cayenne pepper, then add tomato puree and roasted red peppers.
  5. Add sugar and sherry vinegar, simmer on low for 8 to 10 minutes.
  6. Adjust seasoning with salt and pepper as needed.
Assemble the Loaded Tots
  1. Spoon bravas sauce into each tater tot cup.
  2. Sprinkle shredded cheese on top, and add crumbled bacon if desired.
  3. Return to oven and bake for 3 to 6 minutes until cheese melts.
Garnish and Serve
  1. Top each tot with a dollop of sour cream and sprinkle with chopped parsley or chives.
  2. Serve warm on a platter with extra bravas sauce on the side.

Notes

These tots can be customized with various toppings and sauces. Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the oven to maintain crispness.
