Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons peppermint extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • Green food coloring Optional for festive appearance
For Topping
  • Hershey's Kisses, unwrapped One for each cookie

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and peppermint extract.
  4. In another bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. If desired, add a few drops of green food coloring and mix well.
  6. Scoop tablespoons of dough and roll them into balls. Place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Remove from the oven and immediately press a Hershey's Kiss into the center of each cookie.
  3. Let cool on a wire rack.

Notes

Store cookies in an airtight container with parchment paper to prevent sticking. Best enjoyed at room temperature.
