Preparation
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, and peppermint extract.
- In another bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- If desired, add a few drops of green food coloring and mix well.
- Scoop tablespoons of dough and roll them into balls. Place them on a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and immediately press a Hershey's Kiss into the center of each cookie.
- Let cool on a wire rack.
Notes
Store cookies in an airtight container with parchment paper to prevent sticking. Best enjoyed at room temperature.
