Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in the butter until the mixture resembles coarse crumbs.
- Stir in the mustard and buttermilk until just combined.
- Fold in the diced ham, cheese, and herbs.
- Turn the dough out onto a floured surface and knead gently.
- Roll out to about 1 inch thick and cut into circles or wedges.
- Place on a baking sheet lined with parchment paper.
- Bake for 30 to 35 minutes or until golden brown.
- Let cool slightly before serving.
Notes
Keep the butter cold for flaky texture. Do not press or over-knead the dough. For portion control, serve one biscuit per person.
