  • 3/4 cup buttermilk

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the mustard and buttermilk until just combined.
  5. Fold in the diced ham, cheese, and herbs.
  6. Turn the dough out onto a floured surface and knead gently.
  7. Roll out to about 1 inch thick and cut into circles or wedges.
  8. Place on a baking sheet lined with parchment paper.
  9. Bake for 30 to 35 minutes or until golden brown.
  10. Let cool slightly before serving.

Notes

Keep the butter cold for flaky texture. Do not press or over-knead the dough. For portion control, serve one biscuit per person.
