Ingredients
  

Base Ingredients
  • 4 cups cups cubes leftover biscuits
  • 1 pound sage breakfast sausage, cooked Cooked and crumbled
  • 2 cups cubed ham
  • 1/2 cup red bell pepper, chopped
  • 1 cup shredded Parmesan cheese
Egg Mixture
  • 12 large eggs
  • 2 cups milk
  • 1 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 8 ounces mild cheddar, shredded
For Greasing and Garnish
  • butter to grease the baking dish
  • chopped scallions to garnish

Method
 

Preparation
  1. Butter a 9x13 or similar size baking pan.
  2. Evenly place the cubed biscuits in the pan.
  3. Add the cooked sausage, cubed ham, chopped peppers, and shredded Parmesan cheese in an even layer over the top.
  4. In a medium mixing bowl, combine the eggs, milk, salt, and black pepper. Beat with a fork until well combined.
  5. Evenly pour the egg mixture over the top of the casserole.
  6. Cover with aluminum foil and chill in the refrigerator overnight.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Remove the casserole from the refrigerator and place it cold and covered in the preheated oven.
  3. Bake for 45 minutes, then remove the aluminum foil.
  4. Scatter the shredded cheddar cheese over the top and bake for an additional 15-30 minutes until the casserole is set and golden.
  5. Allow the casserole to cool for 10 minutes before serving.
  6. Sprinkle with chopped scallions and enjoy!

Notes

Store leftovers in the fridge for up to 4 days or cut and freeze portions for up to 3 months. Thaw and reheat before serving.
