Ingredients
  

Muffin Ingredients
  • 10 pcs eggs
  • 1 cup cottage cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/2 cup mozzarella cheese chopped
  • 1/2 cup pepperoni chopped
  • 1 spray cooking spray for greasing muffin trays

Method
 

Preparation
  1. Preheat your oven to 320ºF (160ºC).
  2. Lightly spray your silicone muffin trays with cooking oil.
  3. Prepare a rimmed baking sheet and boiling water for a water bath.
  4. In a blender, add the eggs, cottage cheese, Italian seasoning, salt, and pepper. Blend until completely smooth.
  5. Place the silicone muffin tray onto your baking sheet.
  6. Equally distribute mozzarella cheese and chopped pepperoni into the muffin cups.
  7. Gently pour the egg mixture into the muffin cups until they are almost full.
  8. Carefully pour hot water into the baking sheet (not the muffin cups).
Baking
  1. Bake in the preheated oven for 25 minutes.
  2. Remove muffins from the oven and let them cool for 5 minutes before serving.

Notes

These muffins can be customized with various ingredients. They can be served warm or at room temperature and are great for meal prep. Store leftovers in an airtight container for up to 5 days in the fridge or freeze for up to 3 months.
