Ingredients
  

For the Cookie Dough
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon professional red food coloring *optional, for vibrant color
  • 2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
For Coating
  • 1/2 cup granulated sugar for rolling
  • 1/2 cup powdered sugar for rolling

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract and red food coloring.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture, beating until just combined.
Baking
  1. Set up two bowls: one with granulated sugar and another with powdered sugar.
  2. Use a cookie scoop or tablespoon to scoop out dough and roll into balls, coating first in granulated sugar and then in powdered sugar.
  3. Place the cookie balls on the prepared baking sheet, leaving space between each.
  4. Bake for about 10 minutes until cookies puff up and form cracks but are gooey in the center.
  5. Allow cookies to cool on the baking sheet before transferring to a cooling rack.

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
