  • 3 pounds fingerling potatoes Small, tasty potatoes that have a long shape.
  • 2 tablespoons extra virgin olive oil
  • 6 cloves garlic, minced Fresh garlic for a strong flavor.
  • 2 tablespoons chopped rosemary Fresh for best flavor.
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper

Method
 

Preparation
  1. Preheat oven to 400°F. Rinse potatoes well.
  2. Place potatoes in a baking dish. If needed, cut larger ones in half for even cooking.
  3. In a small bowl, mix olive oil, garlic, rosemary, salt, and pepper.
  4. Pour the mixture over the potatoes and stir until they are well coated.
Cooking
  1. Arrange the potatoes in a single layer in a baking dish.
  2. Bake for 60-70 minutes, stirring occasionally, until fork-tender.
Serving
  1. Let the potatoes rest for a couple of minutes after baking.
  2. Serve hot as a side with meat, fish, or in a warm salad.
